It's hard to tell anything as you have chopped so much out of the log.
Please post the full, unmodified log.

Disable pass through and set number of channels to 5.1 - does that help?

Using the Expert Setting: System>Audio and turning off passthrough, I don't see any place where one can set the number of channels. I know we used to be able to do that, but those options don't appear regardless of whether I chose Optimize, Best Match or Fixed. I've looked around the other setting panels and can't find anyplace where I can set 5.1. Please let me know where those setting have moved to.
In any case, choosing any of the three options of Optimize, Fixed or Best Match with passthrough off makes no difference. I only get two channel PCM. Looking at the audio settings while a movie is playing, I can see that Kodi is seeing multichannel soundtracks, but they are greyed out and can not be selected. Are there any sound preference files I can trash? I can't find any.

I just tried starting over by trashing the Kodi folder in the Applications Support folder in my home library. It still only outputs two channels. Just to make sure, I test played the same movie in VLC and got DTS 5.1. After years of XBMC and Kodi use, I'm bumming out.

Last idea - enable pass through again and ensure that "sync to display" is turned off in video player settings
