I am new to skin configuration. Is there some kind of comprehensive document that shows what the different options are, and how to set them up. 

I love the layout of the skin and I am ready to customize, I just need some direction on where some kind of info that will help me with achieving this.

You could start with reading the First time user (wiki) pages. But usually it works best by simply using Kodi as is. Browse through all menus (enable the Expert setting for full menus), and see where it gets you. Mind you, not all sections of the Wiki has been upgraded to Krypton levels. There is simply a lot of wiki contents.
