Well,
I got it working, for now.
I created a new google ID, new cloud console project and all new API keys. To make sure they were 'clean'. I did this on a Win10 box and emailed API keys via a text file to the new gmail account.
I ran up the RPi and logged into Gmail to retrieve the text file. I cleared the entries in Kodi then using Geany I edited the json file and saved.
I then launched Kodi and checked the setting for the keys - OK.
I launched the YT add-on and went through the Two Applications palaver (using the Win 10 box as the second device) and it started to work.
Now we wait to see how long before Google decide to purge the projects or move the goal posts again.
Thanks for the help. Especially the json file edit idea - although it took a while to locate it in the hidden .kodi folder...
