I was wondering if it was possible to set up XBMC to skip the screen where you select how you want to browse say TV shows (ie choosing between title, year, genre etc) and have XBMC automatically default to one of them (in this case title)?

yes, it's called 'flattening', see the lhs menu in the media window.
