I have setup my ATV2 perfectly and now I want to clone the entire device so I can give as gifts to other family members. Can I just SSH in and copy the entire directory to a new device? Or is there a nice tool available to clone ATV2?

no and no ... if you are talking about the xbmc settings only then the wiki should tell you howto move these settings between multiple atv2...
