Hi there I am looking at getting ATV and then flashing XBMC on to it.

One question I have is that will the original Apple user interface be wiped? So it could never be used again?

doesnt have to be.
You can flash the Apple TV 1 and start xbmc from the original apple TV menu, everything will stay the same.
But you can also choose to install Crystalbuntu, but this will wipe the HDD inside of the appleTV and then you only have XBMC (<-- my choice) (you can also use a usb-stick and the there will be no change on your HDD)
But if you install Crystalbuntu, you can always restore the AppleTV
