I installed 14.04 xbmcbuntu on an intel NUC but it just takes me to the ubuntu screen when it boots, so I have to manually launch xbmc. Any ideas how to change this? I have used ubuntu in the past so I'm familiar with the terminal.

Just log off xbmcbuntu and login into the kodi or xbmc session/user and done. Lightdm remembers last used session and uses that.
