Is there a way to automatically set an Original Size View Mode in Kodi for 1080p videos that have been cropped? Such as playing a 1912x1072 video at its original size on my 1080p tv without stretching the video to the display?

While playing a video, bring up the menu (m), bring up the video settings, then toggle through the view modes. Set it to the one you want and then scroll to the bottom of the video settings and save as default. This will set the default mode for ALL videos.

You can also try toggling the 'Z' key rapidly while playing.
