Is it possible to create a widget of a just a subset of the Video Add-Ons? I don't want to see all of them... just the main 5 or 6 that I use regularly.

Yep.

Use Super Favorites

• In Super Favorites, create a Folder for the Add-Ons you want.
  
• Add the Add-Ons you want to that folder.
  
• Point the widget to the Super Favorite folder
  
• Set the widget type to Panel with a Square Poster
  

The Panel type will display 5 Add-Ons. You will have to scroll for the rest. If you want to see more on the screen without scrolling, use the Extended Panel or Compact Extended Panel...
