I have 3 front speakers and 1 sub. I did not setup my rear surrounds set. What setting should I put to just enable the 3 front speakers..

Depends what you want. You can either set to stereo and output to all channels which will mean your centre and subwoofer would also get a signal (but not a distinct signal)
Or you could just set 5.1 which would send discrete signals to all 4 of your speakers (using AC3/DTS) but you would miss anything sent to your rear speakers.
I've never seen any media optimized for 3.1, so you'll either have stereo sound out of your 3.1 setup or you could just use 5.1 knowing that you'd miss out on anything sent to the rear two channels.

If you're using a surround receiver your best bet is to setup XBMC for 5.1 and tell your receiver you don't have rears. It'll then mix those into the fronts if needed. Most DD/DTS receivers have settings for turning speakers on and off so it mixes accordingly.
