My music is stored on a NAS where my server (Twonky) is also located. I stream music to my renderer, an old Philips SLA5520. Can I control this operation from my PC letting XBMC act as a UPnP/AV control point? (like the old software Cidero if anyone remembers...).

No XBMC is not a controller it is a UPnP client/server and renderer.

Try Plugplayer you can use that as a controller if you have a iOS/Android smartphone or iPod touch.
