there's no reason whatsoever that OpenELEC shouldn't work, or at the very least that the installer shouldn't work. Trying another OS isn't likely to help at this point
Well, so here's an update...
I came back into work this morning and set it all up again with the Displayport. It boots again and I have the same issues as yesterday. So, I connected both the display port AND the HDMI to my other T240 monitor... This time I put in the installation drive and booted and when I selected option 2, it booted, then switched video to HDMI to complete the installation. Now that I have OpenElec installed and configured, I rebooted the system without DisplayPort and blammo! It works! So I think I now have a functioning dedicated openelec box.
The TL;DR for this is - to install standalone, I had to connect both DisplayPort AND HDMI.
Weird.
