In most cases Android devices don't support profile 7, so there's no difference and not converting could even be worse.
I have read about player trying to play both layers at once and basically choking (I'm simplifying, I don't know the tech details) with 7.

But what I would like to understand is: when it gets converted to 8.1 on the fly, the resulting signal is still DV but the actual content? Simple HDR10 or something better but lesser than profile 7? I hope the question is clearer.

It's Dolby Vision profile 8.
Equivalent to profile 7 MEL but in theory not as good as profile 7 FEL (which isn't commonly supported).
Whether you'd tell the difference is subjective and depends on the title.

I currently have 3 Nvidia Shield's running Kodi on each, all running off the same media database (e.g. shared files amongst them).  2 of the TVs are HDR10 only and 1 of the TVs is HDR10 + DV.  Is my assumption correct that if I install this version on all 3 NVidia Shields that I can have HDR10/DV media and on the 2 TVs that support HDR10 turn off DV processing within Kodi and on the 1 TV that supports DV, turn on DV processing?

You can already turn off Dolby Vision on a NVIDIA Shield.

Installing this Kodi build won't do anything for you.
If the media is Dolby Vision only (profile 5), it will still not be correctly displayed on non-Dolby Vision TVs.

Ah ok, I didn't realize they now have profiles that fall back to HDR

Is there any chance I can get 7a alpha 2?

There is a significant bug in alpha 3 where it will ignore cache images and will instead scrape url's, which was not present on alpha 2.

Thank you my friend, alpha 2 is brilliant and now I don't have to use two kodi builds, much appreciated.

I'm pleased they fixed the bug quickly in the nightlies, pinging the servers for artwork constantly was a dealbreaker for alpha 3, surprised only one other person in the thread has requested alpha 2 due to that reason.

I also get back to alpha 2 for the same reason like you (the cache problem was pretty annoying) and i also waiting for a fixed next version.

Maven from Kodinerds provides regular builds based on Kodi master.
I've asked him to integrated the DV fix from quietvoid into his builds and he did.
The cache issue has been fixed in Kodi master and therefore the latest Maven's build works perfectly on my Fire TV 4K Max.

I've updated the build to the new Kodi 21 Omega Beta 1 release.

I installed your Omega Beta 1 update on my Firestick 4K, and have a "messed up" intro picture on my LG C2; could not catch a SS so made a picture:

If you can leave only the logo on the black background as in your older versions, that would work for me. If it's a Kodi thing, how can it be fixed?

Btw, all the rest works perfect for me...
