Now I got really interested in this and I played a little with Ember, maybe I found a solution that fullfills what you are looking for:
After updating ember and seeing the new movie in the movie list perform this steps:
1. Select and Mark movie (right click, "Mark" or CTRL-M)
2. Instead of going directly for the NFO scrape select the last action in "Scrape Media" (in german its something like "Userdefined scraper")
3. A dialog pops up. Select "Marked movies" as selection filter and the checkboxes for Nfo, Metadata, Extrathumbs and Trailer, leave poster and fanart unchecked
4. Hit "Start"
5. Be happy
At least this worked for me, Ember scraped every info including the trailer link and kept my poster and fanart untouchted
BTW: The action "Scrape NFO" is available in the right click context menu if you select more than one movie, thats why you didn't find it. But this solution now seems to be better anyway
