Is there any way to get certain shows to only show the earliest unwatched episode until viewed then switch to the next episode in future instances? I tried using Lazy TV but it doesnt update after an eps been watched.

I would try activating advanced channel settings "In Order" and "Only Play Unwatched".

But if I missed an episode wouldn't it just skip right to the next one the next time the show is "aired"?

Yes, but PTVL isn't really made for what you need. It provides channels full of shows. You need an on-demand playlist that pulls in only your next watched shows, which you can then pick.
