Some time ago, while working on Spain/Nordic handler in the add-on, a user using the nordic region reported getting DD+ with the add-on in that region but I wasn't able to confirm that, so not sure.
But Hbo Nordic/Spain uses a different api, different provider, different implementation and a different set of rules.

Hbo go doesn't mark the 5.1 streams as default in the manifest atm and there is currently no way to control that at least not without complicating things unnecessarily.
My suggestion that I already gave couple of posts before, would be Under Settings / Player/ Language disable "Prefer Default audio streams" in Kodi. This should make Kodi not chose the audio stream marked as Default but the one that matches the selected language and with the most channels/best encoding first.
That should give you the 5.1 streams from the start always.
As for the second issue the Spain/Nordic handler probably sets the content type to series and leaves it like that for all content will look into it.
