I created a profile called test to mess around. I cannot seem to delete it. Every time I go into the profiles, and try to confirm delete, Kodi crashes. I tried to upgrade LE to 9.2 (Kodi v18.5) and had the same issue.
Is there a way to delete a profile outside the GUI? (SSH, etc?)

Yes.
Delete the "Profiles" folder under ~/.kodi/userdata
Then each created profile will be gone.

I actually found that solution didn't work. The profile remained listed in the profiles screen.
I had to ssh in, stop the Kodi service, then update the profiles.xml file, restart the service. (And delete the profile folder)
