so I do understand that only the xbox supports outputting stereo to all speakers, i'm just wondering why this is so?

what is it about other platforms that don't allow this to occur? I mean the appletv has optical output, as does the xbox, so what is it specifically that prevents the appletv from outputting stereo to all speakers?

It's not just a matter of having the same physical connector. You have to upmix the signal in software somehow, and all the various platforms have different ways of doing this, if they have one readily available at all, so implementing it is non-trivial.
